In a previous version of RPCEmu, on the Mac, it was possible to change the location of the data folder. I used this, to great effect, to switch between RISC OS 3.70, 4.39, 5, and 6. However, with the latest versions of RPCEmu, this facility is no longer there - presumably because it is now using the same source code as the Windows version, which you could never do this with.
So, whereabouts is the config file which holds this info?
(I don't very often switch OS, so it's not a big deal not to have that facility)

On RPCEmu 0.9.3a for macOS, hold down the SHIFT key when double-clicking on RPCEmu-Interpreter or RPCEmu-Recompiler. You can then choose a different data directory.
The settings files (should you need to access them) can be found at
~/Library/Preferences/org.marutan.rpcemu-interpreter.plist
~/Library/Preferences/org.marutan.rpcemu-recompiler.plist
but you will need a utility capable of displaying/editing .plist files.
